Carla Hall’s Fried Apple Pancake Rings

Finding ourselves with an abundance of apples one weekend, we decided to try Carla Hall’s Fried Apple Pancake Rings from ABC’s The Chew. I’m not sure who Carla Hall is, and I had no idea ABC had a cooking show, but this recipe was a winner. It probably would’ve been even better if we had, you know, made them right, but beggars can’t be choosers.

Once I had my fill of a week’s worth of Twitter and Facebook updates, I dragged myself out of bed to scavenge for sustenance. We considered our options for breakfast and landed on a pin that I had forgotten about completely. Going back to it now, it seems that I was, understandably, smitten with the idea of apple pancakes and needed them “meow.”

And as per usual, we were lacking some of the ingredients–okay, half of the ingredients–but we are troopers, so we forged ahead.

  • 1 cup Bisquick? Nah, we are simple people who use Aunt Jemima. Just add water and pancake batter is yours for the taking. We can’t be wasting our precious milk and eggs on pancakes.
  • 1 egg
  • 1/2 cup milk
  • 1 tsp pumpkin pie spice? Who has this stocked in their kitchen? I’m curious to know.
  • Zest of 1/2 lemon. This reminds me that we should invest in a zester.
  • 2 medium apples, pared and cored
  • Lemon juice and zest
  • Apple Cider in the Spring? Kind of out of season, no?
  • Cinnamon, check that box.

Armed with our meager supplies–Aunt Jemima pancake mix, apples, and cinnamon, we began.

Overall, while we didn’t use nearly all of the ingredients that probably would’ve made these apple pancakes out-of-this-world (apple cider syrup, yum), this is still a pretty delicious and simple idea for breakfast. It’s cheap and you probably have as many as the ingredients as we do, maybe more if you’re an actual functioning adult.

If you should try this recipe, you probably want to slice the apples thinly and evenly so all the pancake batter cooks. Maybe even try coring it in one fell swoop (although, the double-core holes are pretty adorable). And real maple syrup is seriously worth the buy. So, now you know, and knowing is half the battle.
